And yet Everything Else happens to contain some of Italy’s best sparkling wines: the Champagne-method (or, in this context, Metodo Classico) wines from Franciacorta in Lombardy, Trentodoc in Trentino and Alta Langa in Piedmont. After tasting a dozen examples in recent weeks, I wondered why more drinkers aren’t seeking them out.
